Awkward & Awesome Thursday

Bless this day.

This week seems like it is taking FOR-EV-ER...think The Sandlot for that one. For..ev...errrrr. for...ev...er. Alright, I'm done.

It's been a long time coming that I finally link up & use the best of my abilities for my crazy but good friend Erin's Awkward & Awsome (she can't even spell awesome right for her button? she's a winner ;) Thursday!

This is my first time linking up for this so cut me some slack..


1. The fact that I got super glue in my EYE one morning before work this week. Then I decided to continue going to work like it was nothing only to drive all the way there with an itchy, irritated, red eye and have to sent home to get a new contact because I couldn't see my computer screen. I drove with one eye closed home (it's a 10 min drive.) Sounds safe, right?

I felt like I was in grade school and the nurse was telling me to go home, honey.

"Mistook Superglue for Eye Drops" --surprisingly enough..this is NOT me.

You're probably thinking..how does one get SUPER GLUE in her eye?
I thought that too, even after the fact.

I wish I had a better story for this..but I blame it on my lack of brain power in the mornings that I didn't wait until what I was super gluing to be completely dry. So I snapped it...and BAM! the super glue splashed up into my eye. If you would've seen my facial reaction when that happened..you would be laughing.

2. That Billy sometimes tricks me and when I'm scratching Rocky's belly {if you are new here: Rocky is our little pups} he pushes my hand down to his ____ you know what, to be funny. Too bad this is like borderline nasty/violating my poor fur child.

Billy just cracks up like it's nothing.

TMI? Maybe, but this is AWKWARD & Awesome Thursday.

3. The old, bald man that was trying to grind with me and my girlfriend at the Kenny Chesney concert.

His pickup line?
"My wife is all the way up in the 4th row!" (we were in the 11th)

Gee, that REALLY makes us want to make things happen with you.
A. Do you not see the ring on my finger?
B. You are old.
C. You are married
D. You are old..like my Dad's age. Sick.

I then proceeded to go help him find his wife in the 4th row. Hey, I could get a better view from there...?

1. The fact that Billy finished staining our deck. Woo-to-the-fricken hoo..it's completely finished and looking beautifulll.

Bethenny In The House

Today Bethenny Frankel is in Columbus!

She is doing bottle signings of her famous Skinny Girl Margaritas at two different locations throughout the day. Both are during my work hours unfortunately, but since I'm borderline obsessed with her and her little nugget Brynn I'm going to try and make it to see her.


As you all know, I post a lot of her recipes here on my blog and I'm obviously a Skinny girl margarita addict. Ok, I just LOVE HER in general. I think me and her would be besties..I mean, we both have the same dry sense of humor and are control freaks when it comes to some things everything.

They are only accepting the first 150 people that show up to get a bottle signed, so wish me luck! It will be hard for me to leave early since it's during work, but I will be thrilled if I do get lucky.

In honor of her appearance today in my hometown, I'm sharing another favorite recipe of hers with you all.

{you are thrilled I know...but I'm secretly trying to convert all of you.}

...because Taco Tuesdays are such a big hit in our household, I thought this would be the perfect recipe of hers to share. This recipe is actually vegan, but still looks great and shows you can still have meatless tacos.

Vegan Tacos
  • 1 pound ground meatless crumbles (I used Yves)
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon Tabasco sauce
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon red pepper flakes
  • 4 whole wheat crunchy taco shells
  • 4 whole wheat soft taco shells
and here's her version of Chicken Tacos {for those of you that are saying "I just love my meat"..yeah..you}:
  • 1 pound lean ground chicken
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon Tabasco sauce
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon red pepper flakes
Taco Topping Options:
  • ¼ heart of romaine lettuce, shredded
  • ½ cup reduced fat shredded vegan cheddar cheese
  • 1 cup nonfat vegan yogurt or vegan sour cream mixed with 1 tablespoon fresh lemon juice
  • 1 cup medium salsa verde
  • guacamole
  • chopped tomato

Vegan Tacos
  1. Spray a nonstick skillet with cooking spray and put over medium heat.  Place meatless crumbles in pan.  Add all the other ingredients, sauté to warm and combine flavors.  Stirring and breaking up the meat with a wooden spoon or spatula, until the meat is browned.  Set aside.
  2. Wrap the tortillas in a towel and heat in the microwave for 15 to 30 seconds.  Serve still wrapped in the towel to keep them warm.
  3. To serve put the meat, tortillas and toppings out and pass the places.  Everyone can enjoy assembling their own taco

It's been around 5 months now that I've been a vegetarian! YOU can do it too, I promise. I feel GREAT and don't miss meat at all! I will have the occasional steak craving, but that goes away quickly. Chicken just sounds disgusting to me now.

Sweet Summertime {Kenny Chesney}

This weekend we were blessed with beautiful pool weather and we soaked up every minute of it. Saturday was one of those days you feel like your in college again and now my body hates me today because of it.

Our good friends Jim & Rudy live at an apartment complex that has a huge pool, volleyball courts, bar, cornhole boards, music, etc. We were in the sun all day long and played about 10 games of sand volleyball...it was heavenly.

{OK, maybe not this heavenly..but still heavenly.}

Next thing I knew it was 7pm and we were going to the Kenny Chesney concert. Whatttt..? Did we have tickets? NO! But we had a plan. Don't you love unexpected plans that come together at the last minute? 2 of our friends had tickets and Me, Billy, and Rudy didn't, but our plan was to just go and scalp them. Our plan was to just buy any general admission ticket and then sneak down to the FLOOR where our friends Jessie & Jim had tickets. I've mentioned like 5 times before on my blog about sneaking down to better seats, so by now you guys all know I'm a pro and this plan totally worked.


We ended up paying $20.00 for our tickets and then our friends passed us their wristbands for the floor and next thing I knew we were 11 rows back jamming to Kenny Chesney until the sun went down {we'll be groovin' when the sun goes down...}. AWESOME! thank you Jessie - if you're reading!

We had so much fun at the concert and Kenny was GREAT to see live! He put on a really fab show. I just love country concerts!!

Sunday was spent recovering and spending many hours at Whole Foods.
If you know me at all, you know I love this store.


 ....I would sleep there if they would allow me.

So, not many house projects got done this weekend, but I do have a DIY for you guys this week! :)

Homeowner Joys

I confess, I didn't have much to blog about today.

...until I found a certain something that I ordered for our house and I can hardly contain my excitement. A lamp.

Say what.....?!? {insert squeeking tires sound}

Yup, you heard read right... a lamp. What is the world coming to? I, the goddess that is notorious for being handbag, clothing, and shoe obsessed, is officially more excited about receiving a lamp in the mail than the cute lacy skirt I ordered last week {that is taking forever to get to me I may add}.

Is this what I have to look forward to for the rest of my life as a homeowner? Getting giddy about new pots and pans, kitchen gadgets, and lamps? If so, I'M DOWN!

You see, I've been stalking this lamp for quite some time ever since Sarah helped me find it. It's from IKEA and the closest store to us is about a 3 hour drive. Ehh...not bad, but not great. Of course it's not available to order online either. I wasn't sure if I wanted to make the trip or if I "needed" this so-called lamp that much. I found it on Ebay but you know how Ebay goes..not sure if you are getting exactly what you pay for. I was hesitant.

Until today, on this magical morning before work, that I found a home decor seller on Amazon that sells this amazing lamp and it just so happens they have 1 in stock. ADDED TO CART IMMEDIATELY. and the angels sang...

This bad boy will be the new addition to our office....
