COPY CAT CHIPOTLE GUACAMOLE...SERIOUSLY.

 

Whoa whoa whoa!

Life has been a little bit (ok, a lot bit) busy lately. Ever feel like hitting the "pause" button?! I could use that right this instant. I feel like there's so much going on now that the weather is steadily nice (this is not me jinxing it...right?) and even though the days are longer, I'm trying to fit more and more into them! But they are all really great things, so I can't complain.

I did make time for this. This meaning a COPY CAT CHIPOTLE GUACAMOLE RECIPE!

It deserves all caps. Chipotle's guacamole is like a dream to me... so amazing that if they ever forgot to put it in my bowl, I would get in my car, drive back there, and demand ask very nicely for not just the normal amount but a second scoop. It's serious business. 

If you are a guacamole fan, you must make this. Pin away, my friends! It's about to rock your world.



This recipe is pretty simple, but tastes very similar to Chipotle's....or it's just THAT good that I can't tell the difference between the two. Either way, you need it in your life like yesterday.

Copy Cat Chipotle Guacamole:
inspiration from this recipe

Ingredients:
+3 ripe avocados
+1/2 cup chopped red onions
+1/2 cup chopped cilantro
+1/3 cup chopped jalapeno
+1/8 cup of lemon and lime juice ~ 80/20 ratio
+pinch of salt (I didn't even use it and it was still amazing!)

What to do:
Peel and pit avocados, place in a bowl, and mash them with a fork. You want them to be a little chunky. Add the other ingredients and mix. Serve with your choice of tortilla chips - I highly recommend this flavor of Pop Chips! They are SO good and a healthier option for tortilla chips.

VOILA.

  7. Ok, I LOVE Guac so I have to share this recipe that I use ALL the time... try it b/c it is really yummy!

    4 avocados
    1 lime
    1 jalapeño, seeded
    1 clove garlic
    1 roma tomato, diced and seeds removed
    1/4 cup cilantro, chopped
    1/2 cup diced red onion
    1/4 tsp cumin
    1/8 tsp cayenne pepper
    1/2 tsp salt

    basically I'm lazy so I just throw the tomato, onion, garlic, and jalapeño in a food processor and give it a couple pulses and then add that to the bowl with mashed avocados and lime juice. Then I add the cilantro and spices. The spices are what make it and I always get compliments on this from even non-guac lovers.
    I'm going to have to try your recipe tonight... I could eat my weight in this stuff!

  8. Um, I need to make this ASAP! Chipotle guac is my one and only! I love guacamole but it's hard to have it from other places when it's so good there! Can't wait to try it!

  14. I love Chipotle guac...until...I got pregnant. I tried eating it the other night and just couldn't stomach it. I told my husband that I am devastated because I used to crave it! So weird. I want a copy cat recipe of their hot sauce though because I could eat gallons of it right now.

  20. AHHH THIIIIIIIIIS looks absolutely fantastic!!!!!!

    i love guac so much. Like I want to live in it. When I guac it out i sometimes put a splash of orange juice in it and it is YUM!!
