Bethenny In The House



Today Bethenny Frankel is in Columbus!

She is doing bottle signings of her famous Skinny Girl Margaritas at two different locations throughout the day. Both are during my work hours unfortunately, but since I'm borderline obsessed with her and her little nugget Brynn I'm going to try and make it to see her.

As you all know, I post a lot of her recipes here on my blog and I'm obviously a Skinny girl margarita addict. Ok, I just LOVE HER in general. I think me and her would be besties..I mean, we both have the same dry sense of humor and are control freaks when it comes to some things everything.

They are only accepting the first 150 people that show up to get a bottle signed, so wish me luck! It will be hard for me to leave early since it's during work, but I will be thrilled if I do get lucky.



In honor of her appearance today in my hometown, I'm sharing another favorite recipe of hers with you all.

VEGETARIAN STYLE!
{you are thrilled I know...but I'm secretly trying to convert all of you.}

...because Taco Tuesdays are such a big hit in our household, I thought this would be the perfect recipe of hers to share. This recipe is actually vegan, but still looks great and shows you can still have meatless tacos.


Vegan Tacos
  • 1 pound ground meatless crumbles (I used Yves)
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon Tabasco sauce
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon red pepper flakes
  • 4 whole wheat crunchy taco shells
  • 4 whole wheat soft taco shells
and here's her version of Chicken Tacos {for those of you that are saying "I just love my meat"..yeah..you}:
  • 1 pound lean ground chicken
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon Tabasco sauce
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon red pepper flakes
Taco Topping Options:
  • ¼ heart of romaine lettuce, shredded
  • ½ cup reduced fat shredded vegan cheddar cheese
  • 1 cup nonfat vegan yogurt or vegan sour cream mixed with 1 tablespoon fresh lemon juice
  • 1 cup medium salsa verde
  • guacamole
  • chopped tomato
PREPARATION:

Vegan Tacos
  1. Spray a nonstick skillet with cooking spray and put over medium heat.  Place meatless crumbles in pan.  Add all the other ingredients, sauté to warm and combine flavors.  Stirring and breaking up the meat with a wooden spoon or spatula, until the meat is browned.  Set aside.
  2. Wrap the tortillas in a towel and heat in the microwave for 15 to 30 seconds.  Serve still wrapped in the towel to keep them warm.
  3. To serve put the meat, tortillas and toppings out and pass the places.  Everyone can enjoy assembling their own taco

  3. To serve put the meat, tortillas and toppings out and pass the places.  Everyone can enjoy assembling their own taco

It's been around 5 months now that I've been a vegetarian! YOU can do it too, I promise. I feel GREAT and don't miss meat at all! I will have the occasional steak craving, but that goes away quickly. Chicken just sounds disgusting to me now.

  5. I LOVE MY MEAT! haha well I love chicken. Mister Wonderful pushes me to eat it for more protein in our diets...way more healthier than eating Peanut Butter and such..

    We recently bought her skinny girl margarita a few weeks ago from Costco...(think sams club) we both thought it was a wee bit strong, but not terrible. :)

  15. I am OBSESSED with Bethenny Frankle! And as far as being a vegetarian it makes me nervous! I am SUCH a picky eater, I feel like I would be starving myself! Is your hubs a vegetarian too?
