SAW IT. PINNED IT. DID IT: BRIE AND APPLE TARTS

First, I must mention I'm currently listening to 'Undermine' (c/o the Nashville album-love.love.love this song) and still thinking about that episode last night. Did you guys watch it? More importantly, did you know Deacon is 47 years young? All I have to say about that is he doesn't look a day past 35ish in my book.

Moving on to the "hot" topic of the hour...

I had a craft planned for today but quickly tossed that out the window when I made the most amazeballs, and I mean amazeballs, Brie and Apple Tarts last night. I posted a picture of them to Instagram last night and you guys seemed to want this recipe too, so here I am - delivering. I love some requests.

Brie and Apple Tarts:



Ingredients:

-1 green apple
-1 box (2 sheets) of puff pastry, thawed
-1 medium wedge of brie
-1 tbls brown sugar
-1 tbls butter (I didn't use any but original recipe calls for it)
-1/4 cinnamon
*I recommend using more cinnamon and brown sugar than what this recipe calls for. I love cinnamon and think it would be great with more, so don't be shy with it!
-1 egg (to brush on the puff pastry)
-flour, for rolling

Directions:

Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.

Unfold 1 sheet of puff pastry onto a lightly floured board and roll it slightly with a floured rolling pin until it's a 10 by 10-inch square. Cut the sheet into quarters with a sharp knife. Place a good-sized slice of brie and 3 or 4 this slices of apple the middle of each of the 4 squares. Sprinkle apples with cinnamon and brown sugar and top with a pat of butter. Brush the border of each pastry with egg wash and fold 2 opposite corners to the center, brushing and overlapping the corners of each pastry so they firmly stick together. Brush the top of the pastries with egg wash. Place the pastries on the prepared sheet pan. Repeat with the second sheet of puff pastry.

Bake the pastries for about 20 minutes, rotating the pan once during baking, until puffed and brown. 

Serve warm.

Take my word for it and bake these the next opportunity you have to get your bake on in your kitchen. 
They are so delicious and make the house smell wonderful. 
We ate these as a little Halloween dessert last night (like the mounds of candy we had wasn't enough), but they would be perfect as an appetizer as well. 


Rocky wanted me to tell you that he took over as Simba last night,
and that the trick-or-treaters couldn't get enough of him.

  9. OMG Rocky looks freaking adorable in that costume. Cameron and I wanted to dress Brady up as a lion this year but couldn't find a mane for him. haha :) I am super pumped you decided to post this recipe and cannot wait to try it!!

  24. Rocky looks so dashing in his costume!!! Hudson will be incredibly jealous, seeing how he had gotten a little too fatsy to fit into his costume that I had bought for him a month or so ago.
    Also- I am dying over those apple & brie pastries. They look amazing! Must try!

    I started laughing when I saw that you're listening to "Undermine." I've had that song stuck in my head since I woke up this morning. I LOVE the show!! Rayna made me a little annoyed this week though with the way she treated Deacon. She needs to redeem herself soon! And Teddy....what is he up to with his ex?!?! Scandalous!!
