Baked Southwestern Egg Rolls + Fall Decor

I'm sorry that I'm not branching out lately with the recipes, but I just love me some mexican food. I first spotted this recipe on ...yep, you guessed it, Pinterest. I feel like with all that I'm pinning these days, I should try and tackle atleast one new recipe per week {in a dream world}. This one I pinned a long time ago and have wanted to make it ever since, so I'm glad it's now "crossed off the list". Do you ever crave dinners that are on the lighter side? I know I do and these egg rolls are perfect for that. You can add a side of rice if you have a husband like mine who needs more food. These aren't your typical egg rolls..they are so flavorful, spicy, and also vegetarian. You could add some chicken in if you wanted, but they are good without it. My husband dominated them and that makes me very happy! I even had some extras to bring for my lunch the next day and they were just as good as the night prior...whoop, whoop.

I kept saying how much I want to make them for the next party we go to..they would be a big hit I'd bet. Now, I just gotta remember that.

...and I'll make a mental note to not share anything mexican for atleast 2 weeks ;)


Baked Southwestern Egg Rolls

Ingredients:

2 cups frozen corn, thawed
1 (15 oz.) can black beans, rinsed and drained
1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
2 cups shredded Mexican cheese blend
1 (4 oz.) can diced green chiles, drained
4 green onions, chopped
1 tsp. ground cumin
½ tsp. chili powder
1 tsp. salt
½ tsp. pepper
¼ tsp. cayenne pepper
1 package egg roll wrappers (about 24 total)


Directions:


In a large bowl, combine everything but the egg roll wrappers.  Mix well to blend.  Lay an egg roll wrapper out on a work surface so that one of the corners is pointing toward you and place ¼ cup of the filling in the center.  Fold the tip closest to you up over the filling, roll a bit, then take the points pointing outward and fold them in toward the center.  Continue rolling into an egg roll shape until a small part of the remaining point is still free.  Dip a finger in water or beaten egg and lightly brush on the edges of the free corner.  Finish rolling and press to seal closed.  Repeat with the remaining wrappers and filling.
Preheat the oven to 425˚ F.  Lightly oil a baking sheet with cooking spray.  Place the sealed egg rolls on the baking sheet seam side down and spray the tops of the egg rolls with cooking spray.  Bake for about 15 minutes, or until lightly brown, turning halfway through baking.  Serve warm with salsa.

As you all know from my post yesterday, we went to the pumpkin patch this weekend. I also had some time to spice up our house and add some pretty fall decor. I didn't get much pictured, but thought I'd share anyway. I'm on the hunt for a cute fall table runner so the pincone vase will look more complete. Just pretend it's there, will ya? These are iPhone pics so excuse the poor quality.

I got completely hooked on this show when I was home sick the other week. They were having a marathon that day so I watched all the episodes back to back. At first, I was on the fence about if I liked Courtney or not, but now I've decided I pretty much love her. She tells it like it is and is always saying something witty. I want one of everything she wears and can't help but stalk watch her relationship with Matt. They are so cute together, but why aren't they together now?! So disappointing! Courtney has a "what I'm wearing" website now that gives the breakdown of where her outfits are from. How did they know that's just what I need? Makes it so much easier for me to become poor. Le sigh.



What did you think of the big weekend they had together?!


Ooh, and her lace top on WWHL...

I MUST FIND IT.

    and courtney and matt...i stayed up all night to see if they were still together. i was so sad when they said they weren't. they totally should be and i think one day they will be when they are BOTH ready.

  8. I have been on a total Mexican kick right now, too! It didn't help that last time I was at the grocery store the bagger accidentally put someone else's queso cheese and chorizo in my bag. Your decorations look great! All I have up is one pumpkin sitting on my front porch and some hanging mums.

    From the bottom of my heart, I am so very sorry to hear about your mom and aunts. I lost my uncle to pancreatic cancer in high school, and the pain was so terrible.

    I bet they look down on you and smile everytime you remember them and in the ways you are trying to fight cancer. I know there is a cure - there has to be! So very thankful for wonderful people like you who remind me that we're all in this together!

  21. First off, that dinner looks amazing. I love love Mexican food, too! It's the best. Second, I also love that you love Most Eligible Dallas and had a similar issue with to like/not to like Courtney at first. I'm with you though- I LOVE her and wish her and Matt were together now. I was wondering the same... why not?!? Bravo is my addiction. :)

  26. I've so gotten out of my pescatarian/vegetarian ways since I've moved but Mexican is a favorite of mine too because it's so veggie friendly :)

    I'm sad that I only caught one or two episodes of Most Eligible. Total bummer!

  31. I haven't seen the hot tub episode yet but I LOVE that show! I love all the characters although I think Drew is a baby 90% of the time. Also, I'm so glad you pointed out Courtney's website. She wears the cutest outfits!
