Healthy Rainbow Shrimp Pasta by Bethenny Frankel



You will want to make and save this recipe, ladies.

I made this last night and it is now one of my favorite pasta recipes! It's light, so so so yummy, and very easy. Billy isn't a huge pasta fan, but he loved this. That makes me happy because I would totally make this every week or so :) I got to use my very own fresh basil for the first time in this dish and felt somewhat professional haha 


INGREDIENTS:

-1 pound whole wheat linguini 
-1 pound peeled, de veined shrimp (tail off)
-1/2 yellow pepper, julienned (thinly sliced)
-5 sundried tomatoes sliced (in oil)
-2 tablespoons jarred sundried tomato oil (I used EVOO)
-2 tablespoons chopped fresh basil 
-2 tablespoons chopped fresh parsley
-2 cloves garlic thinly sliced
-1/4 cup of your favorite reasonably priced white wine
-2 tablespoons freshly grated Parmesan
-1/4 teaspoon crushed red pepper

PREPARATION:

1. Boil water and cook linguini.
2. On med/high heat, saute garlic in oil with the sliced peppers.
3. Once peppers are soft, add shrimp, sundried tomatoes, white wine, and linguini with some of the reserved pasta water (to bind and make creamy). 
4. Cook on med/high heat until shrimp are cooked. Add fresh herbs, sprinkle crushed red pepper, Parmesan, and salt and pepper to taste.

On another note----

Please excuse me while I rant for a minute. I figure it's better to get it out on my blog rather than taking it out on the Subway employees.

Dear Subway,

As much as I love coming to see you once or twice a week, you are ANGERING me to my core. I know that your employees are good at remembering my order and I appreciate that, but I'm not sure if you know (you mean you don't know my whole life?) or not that I recently became a vegetarian. The Veggie sub has been my go-to lunch for a while now. I do NOT come in to Subway to pay for just the freakin' honey oat bread! I order my $2.75 Veggie sub in hopes to actually GET SOME VEGGIES on it. Why do you insist on making me ask for 'more spinach' or 'can I get another tomato please' each and every time for the past month? Why do all the employees insist on putting 3 lousy pieces of spinach on my sub? I'm not getting any meat here people...I expect an adequate about of veggies since that is what I'm paying for. You continously jip me from 1 tomato and you skimp on my green peppers. I've had it up to here and I may go crazy next time I'm in the store if one of your employees does this again.

  1. I know exactly what you mean about Subway! I always get the veggie sub and it is always puny. I make my husband order it for me when he's around because he says up front "I need a veggie sub with lots of vegetables, extra spinach, extra pickles" Then he watches like a hawk and doesn't feel bad at all about asking for more (He's the sweetest man, but he can't stand paying for nothing either!) I finish mine off with just vinegar, salt and pepper. What do you get? Bethenny's dish is on my must try list.

  2. I don't think you're crazy for your rant..I would be pissed, too! I rarely go there anymore b/c they're so skimpy with their meat! That recipe looks delicious and is going in my recipe binder! :)

  3. OMG! I can so say the same thing Katie....I always get a veggie sub from SUBWAY! They Never put more than one sliver of onion..greenpeper..lettuce. I say let the rege out girl!!!

  6. You'd think the veggies were gold at Subway. The WORST is when after they put a few peppers/pickels/tomatoes on the bread, they decide they have put 1 or 2 too many and proceed to remove them back to the bin. That single pepper is not going to put Subway into bankruptcy...give me what I pay for!
