Feeding The Littles: Cheesy Veggie Quinoa Bites


Happy Monday!

Thank you, thank you, thank you for all your congratulations on our announcement on my blog, facebook, and instagram! Some of you asked about the name for baby boy! We have some names that are strong contenders, but we are thinking about keeping his name a surprise until he's born.

Moving on...I have been working on our trip recap from Cabo but wanted to make sure I included everything, so that post will be tomorrow and for now I've got another feeding the littles recipes to share!

These little bites might be my favorite thing I've made Cam recently. He devoures them and they take less than 5 minutes to prepare! The recipe actually calls for quinoa, but I ran out and used brown rice instead. You can use either!

Cheesy Veggie Quinoa Bites

+1 cup cooked and cooled quinoa (or brown rice)
+1 cup shredded cheddar cheese
+1 cup chopped, cooked vegetables (I used peas, carrots, corn, green beans)
+1/2 tsp salt
+1 egg

Directions: Preheat oven to 350 degrees. Spray a mini muffin tin with cooking spray or oil. Add all the ingredients to the bowl and mix. Divide the mixture evenly between the cups of the tin and press down to pack it in firmly. Bake for 15-20 minutes or until golden brown. I love that these make enough for the week! Enjoy!

Roses Are Red...


A rare Saturday post, but an exciting one at that!

Baby #2 is a BOY!!! 

We are so thrilled for Camden that he is going to have a little brother! We are already talking nonstop about how exciting it will be to see how similar or different they will look and to watch them grow up together! Not to mention, I still get to be the queen of the household and have all these boys to take care of me! 

We can't wait for the end of July for him to get here! Thank you everyone for the congratulations!!

Baby K #2: Boy Or Girl?


Hello hello hello! Is this thing even on? 

Long time no chat! We had the absolute best trip to Cabo! I'm really excited to share all about it...soon. But for now - we've got bigger things to talk about because today (TO-DAY!) we find out if Baby K #2 is a BOY or GIRL!! We are going to the same place to find out that we did with Camden!

I thought it would be fun to do another one of the old wives tales gender prediction charts since I did this one with Cam, even though I really don't believe any of these things! They were almost all wrong with Cam, so I think that since this one looks more pink I'm going to guess this baby is a boy! The only real big difference I've had with this pregnancy is the morning sickness, but I don't think that necessarily means it's a girl because I've heard of many people having the same gender and only sick for one!

We are so anxious and excited to find out if Cam will have a little brother or sister! Either way, we will so happy. A girl would be fun but brothers would be so special, too! A lot of family and friends are guessing girl this time around, but still getting many who think it's another boy! We aren't exactly sure yet how/when we will share the news, so unless I come up with something quick it may be closer to this weekend before I spill!

14 Weeks Bumpdate


How Far Along? 14 weeks, 2 days! Already in the second trimester!

Size of Baby: A beet

Weight Gain: I think right around 2 lbs!

Maternity Clothes: Still in regular clothes for now, but you can definitely see a bump with my tops! It's nice that since it's the winter I can wear leggings pretty much all the time. :)

Stretch marks: None so far. Using my two favorite products to combat these - Mustela's Stretch and Hydration Assistant. I'm obsessed with these creams - the best!

Symptoms: Unlike with Camden, this pregnancy I've had morning sickness (more like all day...worst in evening type of sickness) up until about 10.5 weeks! I only actually threw up a couple of times, but just that all day queasy kinda feeling! I was gagging all the time throughout the day. It stopped when I was around 10.5 weeks pregnant and my energy came back at that point too, so I've been feeling really great lately! Another symptom that I have to mention are c-c-c-crazzyy dreams practically every night

Cravings: It's fun to compare my pregnancies as they have been pretty different so far. With Camden I remember craving cold, healthy items like smoothies and fruit. This pregnancy? Sweets...carbs...sweets...more carbs! I've also been craving more salty items, too. I do think a lot of it has to do with the season though - my first trimester with Camden was in the summer, and now it has been during the holidays when there are cookies and sweets everywhere!

Gender: We find out next week! Not much longer!! Billy thinks it is a girl and I, not surprisingly, go back and forth almost everyday. What are you, baby K?!

Mood: Happy and excited! My hormones have been a little easier on me this time...I feel like I was much more emotional/crazy when pregnant with Camden! ha! I feel more calm and like I haven't had as much pregnancy brain either (meaning I haven't had any instances so far of forgetting to pump my gas at gas stations like last time...remember that?!)

Nursery: Honestly? Haven't thought much about it yet. Once we find out if Baby K is a boy or girl, I'm sure we will start brainstorming things!

Movement: Not yet, but so excited for that. It's the best part!

Sleep: Not lacking in that department, that's for sure. Naps still happen from time to time (a perk of only working part time...on my days home with Cam when he naps I definitely sometimes do as well!) and haven't had any issues sleeping at night yet. Will bust out my beloved  Bump Nest pillow when I start to get a little more uncomfortable. 

Workouts: Getting in about 3 per week right now!

Anything making you queasy or sick:  No real aversions so far

Best Moment This Week: Hearing little babe's heartbeat the other day and continuing to feel well.

Looking Forward To: Finding out if Camden will have a brother or sister - what's your guess?!
